Any night that involves Mexican food is a successful one in my book. I'm not going to pretend like my repertoire of recipes is anything authentic. No matter what I make it always seems like a reorganization of the same ingredients... Taco? Burrito? Quesadilla? Tortilla. Beans. Cheese. You get the picture.
So tonight I was excited to mix things up with this salsa recipe. Tomatillos and avocado? Yes, please! I've always been somewhat of a spice wuss and lean towards green salsas. This one is super creamy with that bite you can only get from fresh tomatillos. I adjusted the recipe slightly with less garlic and green chilies instead of jalapenos because, well, that's what we have on hand here in Colorado!
Roughly chop all ingredients (husk + wash tomatillo//remove pit of avocado) and add to a food processor or blender. Squeeze juice from 1 lime and add with agave and desired spices. Mix until smooth and creamy.
We've eaten this salsa with chips, on burritos even as a salad dressing with some olive oil added to thin it out a bit. It's downright addicting! It also works great on a super quick Mexican pizza with all the fixins'. Honestly you can't mess this one up (thankfully Mexican food is very forgiving) just pile it on and enjoy! Ole!
